Description: Lavender has a sweet, floral flavor, with lemon and citrus notes. Flowers and leaves can be used fresh, and both buds and stems can be used dried. Lavender is a member of the mint family and is close to rosemary, sage, and thyme. Compliments well with fennel, oregano, rosemary, thyme, sage, and savory.
Culinary Use: Best to begin with a small amount of flowers and slowly increase to the desire flavor. For lavender sugar, place flowers in a sugar jar and seal it tightly for a couple of weeks. Use lavender sugar for cakes, breads and custards. Recipes that call for rosemary, stubstitue with lavender. For special occasions lavender flowers look beautiful and taste excellent in a glass of champagne.
